It is hard to believe that we did not own a grill until about a month ago. Needless to say, I have gotten really good at cooking meat indoors! My parents surprised us recently with a new grill which has instigated a thorough dig for some old favorite grilling recipes that I have made over the years. The one I am sharing with you today is what I consider to be a summer staple; made easily from things I always have on hand. Aside from chopping some garlic, there are 2 minutes of prep time and dinner is essentially ready. This is also delicious with bone-in, skin on chicken breast; you would just need to grill them 8-10 minutes on each side.
Grilled Lemon Thyme Chicken

Serves 3-4
1 1/2 tablespoons lemon juice
1/4 teaspoon dried thyme
1/2 teaspoon dried red-pepper flakes
1 clove garlic, minced
1/4 cup olive oil
1/4 teaspoon salt
1/4 teaspoon fresh-ground black pepper
6 chicken cutlets (about 1 ½ pounds)
In a shallow dish, combine the lemon juice with the thyme, red-pepper flakes, garlic, oil, salt, and black pepper. Coat the chicken with the mixture. Marinate for 2-4 hours. Light the grill or heat the broiler. Grill over moderately high heat for about 2-3 minutes per side.
