Molten Chocolate Cake


For all of the dessert lovers out there I have decided to wrap up the week with a fabulous "no fail" recipe for you!  After thoughtful consideration I have chosen this Molten Chocolate Cake recipe because this one comes out perfect every time.  Though cliché, this is a suitable end to any special occasion dinner, especially Valentine's. To further twist your arm, it can be made in advance and baked after dinner, so it is also incredibly easy. I am a chocolate lover, and for a chocolate lover it does not get any better than this. Solid chocolate cake baked with a gooey warm center, and topped with ice cream or whipped cream. Yum! The thing I like most about this is that it is not incredibly sweet, like sugary milk chocolate, it is more bitter like  dark chocolate. It is absolutely delicious! If you want to make it in advance (just a few hours), just mix the batter and pour into the ramekins before refrigerating.  
I have done all I can do, now it is up to you get out your mixers and impress somebody!  

Molten Chocolate Cake
Recipe from Closet Cooking 

makes 3 servings- because 2 will not be enough :)

 Ingredients:
4 ounces bittersweet chocolate
1/2 cup unsalted butter
3 egg yolks
1/4 cup sugar
3 egg whites

Directions:
1. Lightly grease 3 ramekins with butter.
2. Melt the chocolate into the butter in a double boiler and let cool a bit.
3. Beat the egg yolks and sugar and mix into the chocolate.
4. Beat the egg whites in a bowl until they form soft peaks.
5. Fold the chocolate into the egg whites.
6. Pour the batter into the ramekins, no more than 2/3rds full.
7. Bake in a preheated 400F oven for 7-10 minutes. The outside will be set and possibly crack and the inside will still be liquid.
8. Let cool for a few minutes and then run a knife around the edges and tip onto a plate, or eat directly out of the ramekin!
